Recipe: Classic Braised Beef Short Ribs
Ingredients:
- 3-4 lbs Beef Short Ribs
- 2 tbsp Olive oil
- 1 large Onion, chopped
- 2 Carrots, chopped
- 2 Celery stalks, chopped
- 4 cloves Garlic, minced
- 1 (28 oz) can Crushed tomatoes
- 2 cups Beef broth
- 1 cup Dry red wine (e.g., Cabernet Sauvignon, Merlot)
- 2 sprigs Fresh rosemary
- 2 sprigs Fresh thyme
- 2 Bay leaves
- Salt and freshly ground black pepper to taste
Instructions:
- Sear the Ribs: Pat short ribs dry and season generously with salt and pepper. Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear ribs on all sides until deeply browned. Remove ribs and set aside.
- Sauté Aromatics: Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.
- Deglaze: Pour in the red wine, scraping up any browned bits from the bottom of the pot. Bring to a simmer and reduce slightly.
- Combine and Simmer: Stir in crushed tomatoes, beef broth, rosemary, thyme, and bay leaves. Bring the mixture to a gentle simmer.
- Braise: Return the seared ribs to the pot, ensuring they are mostly submerged in the liquid. Cover tightly and transfer to a preheated oven at 325°F (160°C). Braise for 2.5 to 3 hours, or until the meat is fork-tender and easily pulls away from the bone.
- Serve: Carefully remove the ribs from the pot. Skim any excess fat from the sauce. Serve the short ribs with the rich braising liquid over mashed potatoes, polenta, or pasta for a truly unforgettable meal.
